You are what you eat
A couple of months ago, I finally discovered answers to some health issues I was having. You know this has been a four-year journey if you have been around here long. Part of that discovery included highlighting some food allergies. I found out I was allergic to quit a few of the foods that I was frequently eating. Because of this, I have had to make some significant food adjustments.
The first few weeks of making these changes were challenging. I was grateful that I was working from home as I was making these changes. I am not going to lie, it continues to be a bit of a struggle, but I am beginning to find my new normal.
I wanted to share with you a lesson I learned along the way. As I shared, the changes were challenging. But the new food protocol and the new supplements I was on made me feel much better. I can't tell you how great it was not to feel tired all the time. Hallelujah!
A couple of weeks ago, I allowed my brain to make some food choices for me. If you have ever experienced food cravings, you know what I am saying. Pizza and ice cream are two of my favorite foods. Both of those are not on my list of foods. But I convinced myself that a splurge here and there wouldn't hurt. I did this two weeks in a row. I chose one day each week and splurged. The week following the second splurge, I noticed that I was exhausted. Just like I was before I found out what was going on. During the day, I could barely keep my eyes open. I found myself falling asleep on the couch before 8 pm.
Then it hit me. I was viewing each splurge individually, whereas my body felt the splurges as a collective. It was at that moment that the saying you are what you eat became clear. I was eating the foods my body couldn't process or handle, and I was suffering the consequences.
I realized that I had made a grave error, and I needed to get back on track. I can't lie. Every day it is a struggle. I crave things on my list of reactive foods that I rarely ever ate. Hello, peanut butter! But I have to ask myself, how do I want to feel?
The good news is that I have found some great new recipes. I know that we can all get in a food rut, so I want to share them with you.
Grilled Pork Tenderloin with Avocado Green Sauce: (once you taste the avocado green sauce, you will want to use it on everything. We used the leftovers to make pork tacos on a corn tortilla.
Crockpot Shredded Beef Tacos: I removed the chili powder because it is one of the foods my body doesn't tolerate. We didn't miss it. I also made the avocado green sauce from above. Delish!
Flank Steak with Chimichurri Sauce: This meal was delicious. We made it on the grill. My daughter made it in the oven, and she said it was delicious. Make the chimichurri sauce at the beginning and marinate the flank steak in it. You can also use the chimichurri sauce to marinate the chicken in and make chicken tacos.
